Basic Wine Marinade

For 2 pounds meat, poultry or fish. As a rule, use red wine with red meat and white with chicken or fish.


  • 1/4 cup olive oil
  • 1/4 cup wine
  • 2 shallots, finely chopped or 1 onion, grated
  • 2 garlic cloves, finely chopped (optional)
  • 1 tablespoon chopped fresh herbs
  • Salt and black pepper


Combine all the ingredients in a glass bowl. Cover with plastic wrap if you are not using the marinade at once, and store chilled for two to three days.

Pour the marinade over the meat or fish of your choice, and toss to coat the food well. Steep for the recommended time before cooking on the grill for the specified recipe time.
