Look for firm, well shaped, smooth skinned fruit that is free of bruises. Brownish freckled areas do not affect flavour.

To keep the crunch in Ontario apples, store in perforated plastic bags in the refrigerator crisper. Cold, humid storage ensures that apples maintain their crispness, juicy texture and full flavour.

Specialized storage under controlled atmosphere (CA) conditions allow Ontario apples to be sold year round.

Apples emit ethylene gas that speeds up ripening in most fruit, store separately from other fruits and vegetables.

Apples should be handled with care because they bruise easily. To prevent browning when preparing apples, sprinkle cut surfaces with lemon juice.
