Spicy Oriental Picnic Chicken

(NC) - Whether you're hosting a burger night, dinner
party or picnic, beverages in Tetra Pak packaging are a convenient way to keep juice and other
beverages on hand. With no need for refrigeration, beverages in Tetra Pak packages are ideal
additions to drink recipes and sauces to complement your barbeque fare. This juicy recipe created by home economist and author of "Lick the Spoon!", Mairlyn Smith, makes every meal
easy and nutritious!
Spicy Oriental Picnic Chicken is a great recipe to make the night before the picnic so the chicken is thoroughly chilled to go into the cooler the day of the picnic.
- 2 lb. chicken pieces, preferably boneless, skinless thighs
- 1 resealable plastic bag
- 1 250 mL pineapple cocktail in Tetra Pak packaging
- 1/4 cup tamari
- 2 tbsp. brown sugar
- 3 cloves garlic - crushed
- 1 tbsp. sesame oil
- 1 tbsp. grated ginger
- 1-2 tsp. red pepper flakes
Mix all the marinade ingredients in the plastic bag.
Add the chicken and marinate for 4 - 8 hours in the fridge.
Preheat the oven to 425¡ F.
Line a 9" x 13" pan with parchment paper.
Remove chicken from the bag and put into pan.
Cook for 20 minutes or until done.
While the chicken is cooking pour marinade into a saucepan and bring to a boil. Reduce heat
to simmer and cook for 15 minutes until the sauce has reduced and is thick.
Baste cooked chicken with the cooked marinade and let cool.
Remove from pan and store covered in the fridge overnight.
Day of the picnic, pack in a cooler.
Pack 2 frozen beverages in Tetra Pak packaging for each person. These will keep your food
cold and provide icy drinks during the picnic.
