Peach Upside Down Pancake

Perfect for breakfast, brunch or dessert.
- 3 tbsp (45 mL) brown sugar
- 4 peeled, pitted and halved peaches
- 1 cup (250 mL) packaged pancake mix
Generously butter a round 9-inch (2.5 L) cake pan. Top with brown sugar and
sprinkle with cinnamon. Place peaches in pan, cut-side up.
Prepare packaged pancake mix according to package directions. Pour pancake
mixture over peaches. Bake at 400 degreesF (200 degreesC) 30 to 35 minutes. Cool in pan 5
minutes before inverting.
Serving Size: Makes 6 to 8 servings
