Peach Vinaigrette

For a spicier dressing, use part flavoured oil, like hot pepper!


  • 1 peach (pitted)
  • 1 clove garlic
  • 1 piece gingerroot
  • 2 tbsp (25 mL) white wine vinegar
  • 1-2 tbsp (15-25 mL) oil


Combine all items in a food processor.

Puree until smooth. Season to taste with salt and pepper.

Serving Size: Makes about 1/2 cup (125 mL)
