Semolina Cake

And then there's dessert (NC) - Desserts you'll be proud to serve are easy with Five Roses Heritage Pasta Flour. You'll love the flavour and texture 100% durum semolina gives this cake.

Ingredients:

  • 175 ml (3/4 cup) canola oil
  • 175 ml (3/4 cup) sugar
  • 4 eggs
  • 5 ml (1 tsp) cinnamon
  • 5 ml (1 tsp) almond extract
  • 500 ml (2 cups) Five Roses Heritage Pasta Flour
  • 12 ml (2 1/2 tsp) baking powder
  • 175 ml (3/4 cup) chopped walnuts (optional)

Syrup

  • 175 ml (3/4 cup) sugar
  • 125 ml (1/2 cup) water
  • 5 ml (1 tsp) lemon juice
  • 15 ml (1 tbsp) honey

Directions:

Cake

Preheat oven to 150 C (300 F).

In a large bowl, mix oil with sugar. Add eggs, blending well with electric mixer or by hand. Add cinnamon and almond extract. Gradually mix in Five Roses Heritage Pasta Flour and baking powder, blending total mixture until smooth. Incorporate chopped walnuts, if desired.

In a greased 23 cm (10") loaf pan, pour in cake batter and bake in over for 55 to 65 minutes, or until knife inserted in center comes out clean.

Syrup

While cake is in the oven, combine sugar, water and lemon juice and bring to a boil in a small saucepan. Reduce heat and boil gently for approx. 5 minutes, or until syrup becomes slightly sticky to the touch. (Allow a drop of syrup to cool on a plate.)

Do not allow syrup to thicken or become golden. Remove from heat and mix in honey.

Set aside. As soon as the cake is removed from the oven, drizzle syrup evenly over entire surface, allowing syrup to be absorbed.

Garnish with chopped nuts, if desired. Cool.

Serving Size: Makes 8-12 servings
