Sausage And Pepper Stew

  • 2 tbsp (30 mL) olive oil
  • 500 g hot Italian sausages
  • 1 medium onion, thinly sliced
  • 2 large green peppers, cored, seeded and cut into thin strips
  • 1 (680 mL) can Hunt's Italian Tomato Sauce
  • 1 cup (250 mL) water
  • 2/3 cup uncooked small pasta
  • 5 sprigs each of fresh basil and mint tied together
  • Salt and pepper to taste


In a large skillet, heat oil; add sausage and onion. Cook until sausage is brown on all sides and onion is tender. Add peppers; cook 2 minutes. Add remaining ingredients, stirring to submerge the pasta. Bring to a boil; reduce heat to medium-low. Cover and simmer about 25 minutes, stirring occasionally, until sausages are cooked thoroughly and pasta is tender.

Sausages may be cut into slices before serving.
