- 3 cups diced rhubarb
- 1 cup sugar
- 3 cups water
- 1 cup pineapple juice
- 2 cups ginger ale
- 3 tablespoons fresh squeezed lemon juice
Combine rhubarb, sugar and water in a saucepan and cook over medium heat until rhubarb is soft.
Chill thoroughly. Liquify in blender.
In large pitcher, combine rhubarb mixture with pineapple juice, ginger ale and lemon juice.
Serve in a tall glass over ice.
