Rhubarb Marmalade

  • 4 cups chopped rhubarb
  • 1 orange
  • 1 lemon rind
  • 7 1/2 cups sugar
  • 1 bottle fruit pectin


Combine rhubarb, grated rind of lemon, and rind and juice of orange.

Measure fruit . Add water, if necessary, to make each cup level with liquid add sugar. Stir constantly.

Heat rapidly to full rolling boil. Boil gently 2 minutes. Remove from fire. Stir in fruit pectin. Skim. Pour marmalade quickly into hot sterlized jars,filling to 1/4 inch from top; wipe jar rims.

Cover at once with metal lids; screw on bands. Process in boiling water bath 5 minutes.
