Real Mashed Potatoes

- 4 medium unpeeled baking potatoes, cut into l l/2 inch pieces (about 2 pounds)
- l/3 cup skim milk
- l/4 cup plain nonfat yogurt
- 2 tablespoons reduced-calories margarine
- l/4 teaspoon salt
- l/8 teaspoon pepper
Cook potatoes in boiling water about 30 minutes or until very tender; drain.
Combine potatoes, skim milk, yogurt, margarine, salt and pepper in a large mixing bowl; beat at
medium speed of an electric mixer about l minute or until almost smooth.
