Raspberry Chicken

  • 4 skinless boneless chicken breasts

For marinade:

  • 1 250 mL raspberry cocktail in Tetra Pak packaging
  • 1/4 cup raspberry vinegar
  • 2 tbsp. fresh rosemary
  • 1 tbsp. olive oil


Pour all marinade ingredients into a resealable plastic bag.

Add chicken. Seal bag. Shake. Refrigerate for 8 hours.

Heat barbeque.

Remove chicken from bag. Remove liquid.

Grill chicken slowly until cooked.

Meanwhile - pour marinade liquid into a saucepan. Bring to boil and then reduce heat to simmer. Simmer for 15 minutes.

Pour reduced sauce over cooked chicken.
