Pizza Stuffed Baked Potato

An exciting, contemporary variation on the humble baked potato!
- 4 large baking potatoes
- 1/2 cup 125 mL Gay Lea Sour Cream
- 1 tsp 5 mL salt
- 1/4 tsp 1 mL pepper
- 1/4 cup 50 mL pizza sauce
- 1/2 cup 125 mL chopped pepperoni or ham
- 1/2 cup 125 mL diced green and/or red pepper
- 1/2 cup 125 mL shredded Mozzarella cheese
- 1/4 tsp 1 mL dried oregano
Using a fork, prick baking potatoes.
Wrap individually in aluminum foil. Bake on barbecue 40 minutes or until cooked and soft,
rotating frequently. (Alternatively, cook unwrapped in microwave on HIGH power for 12 to 16
minutes, rotating once half way through cooking.)
Let stand 5 minutes.
Cut thin slice from tops. Scoop out pulp and mash together with sour cream, salt and pepper.
Spread pizza sauce in bottom of each potato shell. Add pepperoni and peppers to mashed potato
and sour cream; fill potato shells with mixture.
Sprinkle cheese and oregano on top. Reheat for five minutes.
