- 225 gram tin Pineapple pieces, drained (retain juice)
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups milk
- 2 egg yolks, beaten
- 2 egg whites
- 3 Tablespoons vinegar
Melt butter in saucepan.
Add flour then gradually add pineapple juice and milk, plus beaten yolks.
When cooked, add pineapple and pour into pie dish.
Beat egg whites with vinegar until whites "peak".
Spread over top of pineapple mixture.
Bake approximately 30 minutes at 180 deg C.

Substitute 2 tablespoons white rice flour for 2 tablespoons flour and 1/2 teaspoon lemon juice for 3 tablespoons vinegar.
