Pina Colada Dressing

  • Dressing:

    • 1 cup 250 mL heavy cream
    • 1/4 cup 60 mL banana yogurt
    • 1/4 cup 60 mL pineapple juice
    • 1/4 cup 60 mL Bacardi White Rum
    • 1 tbsp 15 mL cream of coconut

  • Fruit Salad:

    • lettuce leaves; desired fruits, peeled and sliced
    • 1/2 cup 125 mL shredded coconut


To prepare dressing:

In medium bowl, whip cream until thickened but not stiff. Fold in yogurt, pineapple juice, Bacardi rum and cream of coconut.

To assemble salad:

Arrange lettuce leaves on large platter. Decoratively place fruit over lettuce. Sprinkle with coconut. Serve with dressing.

Serving Size: Yields approximately 1 3/4 cups (400 mL)
