Orange Peel Barbecue Sauce

- 1 tablespoon slivered or grated dried orange peel
- 1/4 cup each catsup, soy sauce, and orange juice
- 1 tablespoon honey
- 2 tablespoons oil
- 1 teaspoon freshly ground pepper
Combine all ingredients. Use as a marinade and basting sauce for pork, chicken, or beef.
Citrus grove workers often keep a couple of orange peels drying on a high shelf in the pantry.
You can do this, too, if you save a peel cleaned of its pith and juice; when it becomes leathery, it
is ready to use. You can buy dried orange peel in Oriental food markets, too.
Serving Size: Makes 1/3 cup
