Bacardi Spice Rum Barbecued Apple

- 4 apples, cored
- 30 ml (2 tablespoons) butter
- 60 ml (4 tablespoons) brown sugar
- 7 ml (1/2 tablespoon) cinnamon
- 30 ml (2 tablespoons) BACARDI Spice rum
- Few drops lamon juice
Using a sharp knife, score around middle of apples.
Place apples on a double sheet of aluminum foil. Dab butter amongst apples and add
remaining ingredients. Wrap tightly. Set on barbeque grill, 18 cm (7 inches) away from coals.
Cook 35 to 40 minutes. Turn if needed to avoid burning. Serve with whipped cream.
(Option: Cored apples may be placed in a casserole dish and baked in the oven for 30 to 40
minutes at 350 F.)
