Muffuletta Olive Dressing

Ingredients:

  • 1 1/2 cups chopped pitted Kalamata olives
  • 1 cup chopped Italian green olives with pimientos
  • 1/2 cup olive oil
  • 1/2 cup chopped parsley
  • 4 anchovy fillets, finely chopped
  • 2 tablespoons capers
  • 1 teaspoon chopped fresh oregano or 12 teaspoon dried
  • 4 garlic cloves, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 cup red wine vinegar
  • Freshly ground black pepper

Directions:

Mix together all the ingredients for the dressing and let sit, refrigerated, for at least 2 hours or overnight. The dressing keeps, covered, for more than a week in the refrigerator.

Serving Size: Makes 4 to 5 cups
