Watermelon Mango Salsa

  • 1 ripe mango - diced
  • 2 Tbsp parsley - chopped
  • 1/2 Cup cucumber - peeled, seeded and diced
  • 1/4 Cup jicama - diced
  • 1/2 Cup watermelon - diced
  • 1 Tbsp lime juice
  • zest of 1 lemon
  • Pinch kosher or sea salt


Peel mango and dice. Peel and seed cucumber and dice. Peel jicama and dice. Peel and seed watermelon and dice.

Combine all ingredients in bowl and gently toss to mix. Cover with plastic wrap and refrigerate at least 3 and up to 12 hours prior to serving. Taste and adjust seasoning if necessary.


Fennel works well as a substitute if jicama is not available.
