For 2 pounds chicken, pork or fish, or 1 1/2 pounds vegetables. Prepare the marinade in advance: it will keep for up to two days in the refrigerator.
- 3 garlic cloves, finely chopped
- 1 lemon, thinly sliced
- Juice of 1 lemon
- 3 tablespoons olive oil
- 1/2 cup mixed fresh parsley, oregano, sage and rosemary, finely chopped
- 1 teaspoon fennel seeds
- Coarsely ground salt and black pepper
Mix together all the marinade ingredients in a large glass dish.
Add the food; coat well. Allow to marinate before cooking.
