Labatt's Mustard Pilsner Vinaigrette

(NC) - The Brewers Association of Canada encourages you to experiment with the beer recommended in this recipe. The beauty of beer is that its complex flavours can change the character of a dish each time you prepare it - heartier with a dark beer, lighter with a lager.
- 1/2 cup Labatt Blue
- 2 tsp. Dijon mustard
- Freshly ground black pepper
- 1 clove garlic, smashed
- 1 tbsp. lemon juice
- 1/2 cup chicken stock
- 1 tsp. chopped fresh herbs (basil, thyme, cilantro or dill)
- 1/4 cup white wine vinegar
- 2/3 cup vegetable oil
- Pinch sugar or (1 tsp. honey)
In saucepan, place all ingredients except oil. Whisk together over high heat and quickly heat to
scalding. Cool down quickly, by placing saucepan on ice; whisk in oil and taste for seasoning.
Serve over your favourite mixed greens.
