These also can be spread with cream cheese or peanut butter diluted with milk.
- 1 egg yolk
- 1/2 cup cottage cheese
- 1/2 cup unsweetened applesauce
- 1/2 cup whole wheat flour
- 1 egg white, stiffly beaten
- 100-percent fruit spread (optional)
Combine egg yolk, cottage cheese, applesauce and flour. Fold in egg white.
Drop by heaping tablespoons onto preheated nonstick griddle or skillet. Flatten with back of
spoon, then fry on both sides over low heat until cooked through.
Allow to cool.
Roll up like a jelly roll and serve plain, or spread a dollop of 100-percent fruit spread over
top and roll up like a fruit crepe.
May be frozen.
