Italian Herb Roasted Chicken

  • 3 to 4 lb (1.3 to 1.8 kg) whole chicken
  • salt
  • 1 lemon, cut in half
  • 1 stick Italian Herb Butter


Rinse chicken, remove excess fat and pat dry. Sprinkle cavity with salt and fill with lemon halves. Tie legs together and place on rack in roasting pan.

Melt Italian Herb Butter and brush half of the butter over the chicken. Cook, uncovered, in 375 F (190 C) oven 30 minutes.

Brush remaining half of Italian Herb butter over chicken and continue cooking 1 hour longer or until chicken is tender: baste every 15 minutes. Let stand 10 minutes before carving.
