Mushroom Tuna Sauce

(NC) - A nutritious topping that makes a quick brunch, lunch or light dinner. Serve on toast, cooked rice, egg noodles, spinach or asparagus.
Preparation Time: 5 minutes Cooking Time: 10 minutes
- 1 1/2 tbsp butter 22 mL
- 8 oz sliced fresh mushrooms 250 g
- 1/2 cup Each chopped onion, celery, red pepper 125 mL
- 3/4 tsp dried thyme, basil or dill 4 mL
- 1/4 tsp Each salt and pepper 1 mL
- 1 tbsp all purpose flour 15 mL
- 1 1/2 cups milk 375 mL
- 1 can (170 g) chunk light tuna in water 1
In a large saucepan melt butter over medium high heat; stir in mushrooms, onion, celery and red pepper.
Cook stirring constantly for 4-5 minutes or until vegetables have softened. Add herb, salt, pepper and flour cook and stir for 1 minute. Gradually stir in milk, bring to boil stirring and cooking until thickened.
Reduce heat; drain tuna reserving liquid and add to sauce. Heat until warm; if it is too thick after standing add some of the reserved water from tuna for desired consistency.
Serve over toast, cooked rice, egg noodles, spinach or asparagus.
Add 3/4 cup (175 mL) frozen peas with the tuna.
