Spanish Paella-Style Chicken & Rice

Quick & Easy Spanish Paella
(NC) - Authentic Spanish paella is a deliciously complex mix of chicken, seafood, rice, chorizo sausage, vegetables and saffron that can take hours to prep. With the help of Knorr-Lipton Sidekicks (www.homebasics.ca), you can enjoy the essence of this Spanish dish in 20 minutes or less.
Feel free to use chorizo sausage or stir in some cooked seafood to add a delicious spin on this dish. Enjoy on the patio with a glass of chilled sangria.
- 1 tbsp Bertolli Olive Oil
- 2 chicken thighs
- 1/2 lb sweet Italian sausage links, cut into 1-inch pieces
- 1/2 medium onion, diced
- 1 medium red pepper, diced
- 2 cups water
- 1/2 cup frozen green peas
- 1 pkg Knorr-Lipton Sidekicks Fiesta Spanish Rice
Heat the oil in a large skillet set over medium-high heat. Brown the chicken thighs in the oil. Stir in the sausage and cook 5 minutes. Add the onion and pepper and cook 3 minutes.
Stir in water, peas and Knorr Lipton Sidekicks Fiesta Spanish Rice. Bring to a boil over high heat. Reduce heat to medium and simmer, covered, 20 minutes or until rice is tender.
