Cupcakes with a sneaky veggie secret

- 1 1/4 cups Imperial Margarine
- 1 1/2 cups granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup plain yogurt
- 3/4 cup cocoa powder
- 2 1/2 cups all-purpose flour
- 1 tsp each baking powder, baking soda
- 1/2 tsp salt
- 1 cup each grated zucchini, grated carrots
- 1 can prepared chocolate frosting
Preheat the oven to 350 F (180 C).
Beat together the margarine, sugar, eggs and vanilla until light and creamy. Add the yogurt and cocoa powder and beat until smooth. Stir in the flour, baking powder, baking soda and salt and mix just until combined. Fold in the zucchini and carrots. Place 20 paper liners into cupcake pans. Fill to the top of the liners.
Bake for 25 minutes or until a toothpick inserted into a centre comes out clean. Let cool then frost with chocolate icing.
Serving Size: Makes 20 Cupcakes
