Quick Winter Stew

Nurture your family with a savoury autumn stew
(NC) - What could be more soul-warming when it gets chilly outside than a generous, full-flavoured stew? Its hearty aroma fills the house with welcome and the promise of a laidback meal that will stick to the ribs. Start out your family with this simple stew rich with generous chunks of meat and aromatic vegetables in a rich sauce.
- 1 tbsp vegetable oil
- 1 lb boneless pork loin or leg, cut in narrow strips
- 1 3/4 cup water
- 1 pkg Knorr Demi-Glace Sauce Mix
- 1 tbsp Dijon mustard
- 1 tsp dried thyme (optional)
- 3 cups cubed (1/2 inch, 1 cm) mixed vegetables (e.g. carrot, potato, cauliflower, winter squash, turnip, parsnip)
- chopped fresh parsley (optional)
In a large skillet, heat oil over medium-high heat. Add pork and stir fry until golden brown; remove and set aside. Reduce heat. Add water, whisk in Knorr Demi-Glace Sauce mix, mustard, and thyme and bring to a boil, whisking constantly. Stir in vegetables; cover and simmer about 15 minutes or until vegetables are tender, stirring occasionally.
Return pork to skillet and heat through. Serve, sprinkled with parsley if desired, and with a hearty multi-grain bread.
Substitute lean beef or lamb for pork. As an extra time saver, substitute frozen mixed vegetable pieces for fresh vegetables; cook 5 minutes or until tender.
