Ground Beef Spinach Casserole

  • 2 lbs Ground Beef
  • 1 med. onion
  • 1 garlic clove diced
  • 8oz.can of mushrooms sliced
  • salt and pepper and 1 teaspoon of oregano
  • 2 -10oz packages of spinach thawed and drained
  • 2- cans of cream of cream of celery soup
  • cup instant rice
  • 1-pint of sour cream
  • 3/4 lb of Monterey Jack cheese shredded


Brown ground beef and drain

Saute onion and garlic add to meat

Add mushrooms, salt, pepper, oregano and spinach

In large bowl add soup, rice and sour cream mix together

Combine meat and soup mixture

Pour into 9 x 13 baking dish and top with cheese

Bake at 350 for 30 min.


Divide mixture into 2 - 8x8 and bake or freeze
