Cinnamon Oatmeal Breakfast Pudding

Give your kids a brain boost - start their day with eggs (NC) - Here's a quick and healthy breakfast for lasting energy.

Cinnamon Oatmeal Breakfast Pudding
Preparation: 4 minutes - Cooking: 8 minutes

Ingredients:

  • 2 cups water 500 mL
  • 1/4 tsp salt 1 mL
  • 4 eggs 4
  • 1/4 cup 2% milk 50 mL
  • 1/2 tsp cinnamon 2 mL
  • 1/2 tsp vanilla 2 mL
  • 1 1/4 cups quick cooking oats (not instant) 300 mL
  • 1 1/3 cups 2% milk 325 mL
  • 1/4 cup dried cranberries or raisins (optional) 50 mL
  • 4 tsp granulated sugar 20 mL

Directions:

Bring water and salt to boil in medium saucepan over high heat. Beat together eggs, 1/4 cup (50 mL) milk, cinnamon and vanilla in medium bowl; stir into boiling water.

Reduce heat to medium-low. Stir in oats; simmer 5 to 6 minutes, stirring occasionally, until desired consistency. Spoon into bowls; top each serving with milk, cranberries and sugar.

Serving Size: Makes 4 Servings
