Grilled Spicy Pineapple

  • 1 large pineapple (4 to 5 pounds)
  • 1/4 cup fresh lemon juice
  • 2 tablespoons honey
  • 1/8 teaspoon cayenne pepper, or to taste
  • 2 tablespoons olive oil


Prepare the grill by lighting the coals.

To peel the pineapple: Lay the pineapple on its side and cut a slice off the top and the bottom. Stand it up on end and remove the peel, cutting in long slices from top to bottom. Trim any remaining "eyes," and place the pineapple back on its side.

Cut crosswise into eight round slices; set aside.

Combine the lemon juice and honey in a small nonreactive saucepan, and heat just to melt the honey. Pour into a small bowl and add 1/8 teaspoon cayenne. Set aside.

When the coals are ready (there should be no flames, just glowing red coals with a layer of gray ash around them), brush the pineapple slices lightly with the oil. Place the slices on the grill, 6 to 8 inches from the coals. Grill the slices until brown and warmed through, two to three minutes per side.

Arrange the pineapple slices on a platter or plates. Taste the lemon-honey mixture and add more cayenne, if desired. Spoon over the warm pineapple slices.
