  • !/2 c. thinly sliced green onions with tops
  • 2 T. butter or margarine
  • 1-1/2 c. chicken broth
  • 2/3 c. uncooked long grain rice
  • 1/4 c. minced fresh parsley OR 4 tsp. dried parsley flakes
  • Dash pepper
  • 1/4 c. shredded cheddar cheese, optional


In a skillet, saute in butter until tender. Stir in the next 4 ingredients; bring to a boil.

Remove from heat; pour into a greased 1-qt. baking dish.

Cover and bake at 350-F for 25 minutes or until rice is tender.

Top with cheese if desired; bake 3 minutes longer or until melted.
