Gazpacho

Ingredients:

  • 2 1/2 lb. ripe tomatoes (beefsteak preferably)
  • 1 large English cucumber cut into 1/4" pieces
  • 1 red pepper - diced
  • 1 large clove garlic - minced
  • 2 tbsp. extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 250 mL vegetable cocktail in Tetra Pak packaging
  • 1 cup chicken stock in 1 L Tetra Pak packaging
  • 1 tbsp. Worcestershire sauce
  • Freshly ground pepper
  • 1/4 cup finely chopped chives -garnish only

Directions:

Chop the tomatoes into 1/4 - 1/2" pieces.

Chop cucumber and red pepper.

Mix all ingredients (except the chives) in a large non-metallic bowl.

Refrigerate at least 8 hours or overnight.

Serve garnished with chives.

Serving Size: Serves 8 - 10
