- 2 1/2 lb. ripe tomatoes (beefsteak preferably)
- 1 large English cucumber cut into 1/4" pieces
- 1 red pepper - diced
- 1 large clove garlic - minced
- 2 tbsp. extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 250 mL vegetable cocktail in Tetra Pak packaging
- 1 cup chicken stock in 1 L Tetra Pak packaging
- 1 tbsp. Worcestershire sauce
- Freshly ground pepper
- 1/4 cup finely chopped chives -garnish only
Chop the tomatoes into 1/4 - 1/2" pieces.
Chop cucumber and red pepper.
Mix all ingredients (except the chives) in a large non-metallic bowl.
Refrigerate at least 8 hours or overnight.
Serve garnished with chives.
