Garden Turkey Burgers

Ingredients:

  • 1 c. old-fashioned oats
  • 3/4 c. chopped onion
  • 3/4 c. finely chopped sweet red or green pepper
  • 1/2 c, shredded zucchini
  • 1/4 c. ketchup
  • 2 garlic cloves, minced
  • 1/4 tsp. salt, optional
  • 1 lb. ground turkey
  • 6 whole wheat hamburger buns, split and toasted

Directions:

Coat grill rack with nonstick cooking spray before starting the grill.

In a bowl, combine the first 7 ingredients. Add turkey and mix well.

Shape into six 1-/2-in.-thick patties. Grill, covered, over indirect medium heat for 6 minutes on each side or until a meat thermometer reads 165-F.

Serve on buns.

Diabetic Exchanges: 2 very lean meat, 1 starch.

Nutritional Information: One serving (prepared with ground turkey breast and w/o salt; calculated w/o the bun) equals: 156 calories, 174 mg sodium, 37 mg cholesterol, 15 gm carbohydrate, 21 gm protein, 2 gm fat.
