Garden Soup

Ingredients:

  • 400 ml Onions, chopped 1 2/3 cups
  • 45 ml Butter 3 tbsp
  • 1.5 l Potatoes, peeled, diced 6 cups
  • 1.5 l Carrots, peeled, diced 6 cups
  • 250 ml Celery, sliced 1 cup
  • 75 ml Parsley flakes 6 tbsp
  • 3.75 l Chicken broth 15 cups
  • 375 ml Leeks, chopped 1 1/2cups
  • 5 ml Salt 1 tsp
  • 2 ml Pepper 1/2 tsp

Directions:

Cook onions and butter in stock pot until soft.

Add remaining ingredients. Cover and simmer until vegetables are tender.

For a heartier soup, add cubed cooked chicken.

Serving Size: Makes 16 cups
