Mum's Rainbow Chop in Crystal Folds

Crystal fold is the poetic Chinese term for lettuce; rainbow chop is the term for a colourful meat mixture. Serve this with any Chinese entree. For even more tips and recipes, visit www.presidentschoice.ca.
Prep time: 15 minutes - Cook time: 10 -12 minutes
- 1 tbsp 100% Pure Safflower Oil
- 1 onion, thinly sliced
- 1 clove garlic, minced
- 1 lb ground pork
- 1 tsp ground PC Chinese 5-Spice Spice Grinder
- 1/2 cup President's Choice (PC) Memories of Mum's Kitchen Soy Ginger Sauce
- 1 large carrot, coarsely shredded
- 1 pkg New! PC Cosmos Lettuce, leaves separated
- 2 green onions, thinly sliced
In large nonstick frying pan, heat oil over medium-high heat; cook onions until softened, about 2 to 3 minutes. Stir in garlic; cook until fragrant, about 30 seconds. Stir in pork, breaking meat up with wooden spoon. Stir in spice grinder. Cook, stirring occasionally, until pork is cooked through, about 4 to 5 minutes.
Stir in Memories sauce; cook until sauce is slightly thickened, about 2 to 3 minutes. Stir in carrots. Transfer to serving bowl.
Arrange lettuce leaves on large platter. Allow each person to place some of pork mixture on lettuce leaf and garnish with green onion.
