    Garden Extravaganza Fusilli
  • 375 g Catelli Healthy Harvest Multigrain Fusilli
  • 60 mL olive oil (1/4 cup)
  • 1 leek, white part only, julienned
  • 1 carrot, julienned
  • 1 beet, peeled and julienned
  • 1 red bell pepper, in thin strips
  • 1 yellow zucchini, in strips
  • 1 bag fresh spinach, stems removed (171 g)
  • 250 mL fresh grated Parmesan(1 cup)
  • To taste salt and fresh ground pepper
  • To taste fresh parsley, chopped


Cook fusilli according to package directions; set aside. In a skillet, warm 30 mL (2 tbsp) olive oil; saute leek, carrot, beet, red pepper and zucchini 2-3 minutes.

Add spinach, fusilli, remaining olive oil, 125 mL (1/2 cup) Parmesan, salt and pepper, mixing well. Serve sprinkled with remaining Parmesan and chopped fresh parsley.

Preparation: 20 minutes, Cooking: 15 minutes
