Gaetan Boucher's Greek Salad

Gaetan shares a favorite recipe that he enjoys making for his family (NC) - High cholesterol increases the chance of developing heart disease - one of the leading causes of death of Canadian men and women - yet unmanaged high cholesterol remains one of the most common conditions affecting Canadians. In fact, almost half of all adult Canadians (48 per cent of men and 43 per cent of women) have unhealthy cholesterol levels.

Olympic gold medal speedskater, Gaetan Boucher has joined Making the Connection to urge Canadians to take action to protect their heart health by taking control of cholesterol. Because Gaetan has a family history of heart disease, he understands this means he is at risk himself. But Gaetan has made the commitment to look after his heart and be proactive about managing his cholesterol before a problem develops. Part of this commitment, along with regular exercise, is making healthy food choices.

Gaetan, along with Pat Quinn, Sandra Post, Rod Black and the Making the Connection partners, shares favourite recipes in the Making the Connection Heart-Healthy Recipe Book, which is available to download free by visiting www.makingtheconnection.ca.

It's time Canadians make the commitment and take charge of their heart health. If you have high cholesterol, make sure it's properly managed to reduce the risk of developing heart disease or stroke. For many Canadians, a healthy diet and regular exercise are not enough to reach target cholesterol levels. Ask your doctor about your target, and then take action to reach it.

Making the Connection is a program dedicated to the ongoing education of Canadians about the dangers of high cholesterol, and to encouraging Canadians to take action to control high cholesterol to reduce the risk of heart attack and stroke.

Ingredients:

  • For the dressing, whisk together:

    • 3 oz cold pressed extra virgin olive oil
    • 1-1/2 lemons (use the juice)
    • 1 tsp each of powdered & flaked oregano
    • 1/4 to 1/3 cup chopped parsley
    • Dash Salt & Pepper

  • Salad Ingredients:

    • 1 Spanish onion, sliced
    • 2 medium sized tomatoes, sliced
    • 1/2 pound of Feta cheese
    • 3/4 cup of black olives

Directions:

Layer onions and tomatoes on platter and cover with dressing. Crumble Feta cheese on top and cover with olives. Prepare salad 1/2 hour before serving to allow marinade to work.
