- 2 cloves garlic, crushed
- 1/4 cup mayonnaise
- 1 Tbsp olive oil
- 1/6 cup fresh lemon juice
- 1 tsp salt
- 1 tsp black pepper
- 2 Hass avocados, peeled, pitted, cubed
- 6 medium red potatoes, diced and cooked
- 1/3 cup celery, diced
- 1/3 cup sweet onion, chopped
- 1/6 cup cilantro, chopped
- Cilantro sprigs or celery leaves for garnish
To make dressing, mix lemon juice, salt, pepper and garlic. Stir in mayonnaise and olive oil. Reserve.
Combine potato, celery, onion and mix in reserved dressing. Just before serving, gently fold in avocado and cilantro.
Garnish each serving with cilantro sprigs or celery leaves as needed.
