Diner Meat Loaf

- l/2 cup quick-cooking oats, uncooked
- 3 tablespoons skim milk
- 3/4 pound freshly ground turkey breast
- 3/4 pound ground chuck
- l/2 cup coarsely shredded carrot
- l/4 cup sliced green onions
- l/4 teaspoon rubbed sage
- l/4 teaspoon salt
- l/4 teaspoon pepper
- l egg white
- Vegetable cooking spray
- l/4 cup catsup
Combine oats and milk in a blowl; let stand l0 minutes. Add turkey and next 7 ingredients; stir.
Shape into an 8 x 5 x 2 inch loaf, and place on a rack coated with cooking spray; place rack in a
shallow roasting pan. Brush catsup over loaf.
Bake at 350o for l hour and 20 minutes. Let stand 5 minutes before slicing.
Serving Size: Yield: 8 servings
