(NC) - Served with chicken, fish, crostini or even pasta, this pesto is versatile and nutritious. Use raw peanuts for a fresh accent, or toasted peanuts for a richer flavour.


    Peanutty Pesto
  • 3/4 cup (175 mL) unsalted peanuts
  • 3/4 cup (175 mL) fresh basil
  • 4 cloves garlic
  • 1/2 cup (125 mL) grated Parmesan cheese
  • 1/4 cup (50 mL) peanut oil
  • Juice of 1 medium lemon


In a food processor, pulse peanuts 4-5 times. Add basil and garlic and pulse for 1 minute. (TIP: Instead of a food processor, you can use a mortar and pestle, or finely chop ingredients by hand and combine.)

Add Parmesan, oil and lemon juice; process until combined. The finished pesto should contain visible chunks of peanuts. Serve immediately, or store pesto in an airtight container in the fridge until ready to serve.
