Tomato Topped Cheese
(NC) - Every summer you're faced with the same questions: What dish can I bring to the next outdoor event? Well, this year you'll be beaming with pride at every family bash, company picnic and backyard barbecue because your offering will be the one that wows! The only problem? No leftovers. The experts at the Kraft Kitchens have tried and tested hundreds of recipes and believe that Easy Crisp Cucumber Salad and Tomato Topped Cheese & Bean Dip are two of the best. Try these recipes as seen in the current issue of Kraft what's cooking magazine.
Easy Crisp Cucumber Salad
This recipe takes minutes to prepare. The delicate cucumber ribbons look impressive and are easy to create by using a vegetable peeler.
Prep Time: 15 min., Ready In: 15 min., Serves: 7
- 4 large cucumbers
- 8 radishes, thinly sliced
- 1/2 cup Kraft Greek Crumbled Cheese
- 1/2 cup Kraft Signature Greek with Feta & Oregano Dressing
- 1/3 cup pitted kalamata olives
- 1/4 cup chopped red onion
SLICE 1 of the cucumbers into long thin ribbons using a vegetable peeler; set aside.
PEEL remaining cucumbers; cut into 1-inch cubes. Toss with remaining ingredients.
PLACE mixture in center of serving platter. Arrange reserved cucumber ribbons around edge of platter.
Tomato Topped Cheese & Bean Dip
With its zesty flavour and creamy texture, this cheese dip deserves to be relished.
Prep Time: 5 min., Ready In: 25 min., Yield: 2 cups
- 1 can (19 fl oz/540 ml) Primo Chick Peas, drained
- 1 1/2 cups Kraft 3 Cheese Blend Shreds, divided
- 125 g Philadelphia Cream Cheese Spread, softened (1/2 of 250-g pkg)
- 1/2 cup sour cream
- 1/4 tsp. ground red pepper (cayenne)
- 2 green onions, chopped
- 1/2 cup chopped tomato
- Christie Wheat Thins or Triscuit Thins crackers
PREHEAT oven to 350°F. Place chickpeas, one cup of the cheese, cream cheese, sour cream and ground red pepper in blender or food processor container; cover.
BLEND until smooth. Stir in green onions.
SPREAD into nine-inch pie plate.
BAKE 20 minutes or until light golden brown. Top with remaining 1/2 cup cheese and tomato. Serve with crackers.
