Cucumber And Dill Salad

- 1/2 head romaine, washed & cut into bite-size pieces
- 1/2 head boston lettuce, washed & cut into bite-size pieces
- 1/2 head watercress, washed & cut into bite-size pieces
- 1/2 large cucumber, peeled & thinly sliced
- 1 tbsp. chopped dill
- Dijon Dressing
- 2 egg yolks
- 7 tbsp. Dijon mustard
- 1/2 cup red wine vinegar
- 2-1/2 cups olive oil
Toss greens and cucumber together. Sprinkle lightly with dill.
Add 1 oz. of Dijon Dressing per portion and toss well.
Turn onto chilled plates and serve.
Place yolks in bowl, add mustard and whisk a few minutes.
Add vinegar and whisk again. Slowly add oil, whisking all the time.
This fresh green salad is crisp and cool looking.
The Dijon Dressing gives it a piquant taste to match its appearance.
