Summer Pasta Salad

Pasta and pickles: a great summer combo
(NC) - Need a new tasty salad to take to the next family get-together? In honour of their 75th anniversary, Strub's Pickles, Canada's largest family-owned and operated pickle producer, has created this summer-fresh salad featuring their Original Kosher Dill Pickle, the pickle the company was founded on in 1929. The recipe has been Strub family taste-tested and approved.
- Pasta Salad
- 1 cup canned chickpeas
- 2 cups vegetable fusilli, dry
- 1/4 cup chopped red onion
- 1/2 cup chopped yellow pepper
- 2 Strub's Kosher Dill Pickles, chopped
- 2 tbsp chopped fresh parsley
- 3 tbsp canola oil
- 2 tbsp white vinegar
- 1 tsp white sugar
- 1/4 tsp garlic powder
- 1/4 hot pepper sauce
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander seed
- 1/4 tsp chili powder
Boil pasta according to package directions. Rinse with cold water and drain.
Mix pasta salad ingredients in large bowl.
Whisk together dressing ingredients.
Toss dressing with pasta salad.
Serving Size: Makes 4 1/2 Cups
