Florida Grapefruit and Black Bean Salad

Florida grapefruit = 'great'fruit!
Add a taste of the tropics to your next meal
(NC) - Grapefruit for breakfast may be an obvious choice, but how about incorporating this citrus sensation into your lunch or dinner? The sweet, refreshing taste of grapefruit can complement and put a new twist on some favourite dishes.
Try these creative recipe suggestions and experience grapefruit all over again.
- Lettuce leaves
- 2 Florida grapefruits, peeled, thinly sliced and seeded
- 1 15 oz can black beans, rinsed and drained
- 1 medium cucumber, halved lengthwise and sliced
- 1 cup cubed canned papaya, drained
- 2 oz reduced-fat Monterey Jack cheese, cut into 1/4 inch cubes
- 1/2 cup 100% pure Florida grapefruit Juice
- 3 tbsp fresh cilantro
- 2 tsp honey
- 1/4 tsp ground cumin
Line 4 salad plates with lettuce. Arrange grapefruit slices on plates. Arrange beans, cucumber, and papaya in mounds on lettuce. Sprinkle with cheese.
For dressing, mix together grapefruit juice, cilantro, honey and cumin. Drizzle some of the dressing over the salads. Makes four (4) servings.
Florida Grapefruit Salsa
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp minced jalapeno
- 1/2 red bell pepper, minced
- 2 tbsp minced red onion
- 1 large Florida grapefruit, peeled, membrane removed, sectioned, chopped
- 1/4 tsp ground cardamon
- 2 tbsp chopped fresh cilantro leaves
Toss all together. Serve chilled as side dish to barbecued meat, seafood and nachos.
Makes 1 1/2 Cups
