Pancakes for Shrove Tuesday
(NC) - This year, Shrove Tuesday is on February 8. For the Christian church it is a day of celebration, the last chance to feast before the austerity of the 40 days of Lent begins on Ash Wednesday. Traditionally, all the foods that are forbidden during Lent - meat, eggs, fat and milk - are eaten up on Shrove Tuesday. This recipe follows those rules, but you can enjoy it any time you like!
These pancakes would make for a delicious dinner on Shrove Tuesday, or any day.
- 1/3 cup cornmeal 75mL
- 1/3 cup boiling water 75mL
- 1 1/4 cups Robin Hood Original Homestyle Pancake Mix 300mL
- 1 cup water 250mL
- 1/2 cup grated Cheddar cheese 125mL
- 1/2 cup corn kernels 125mL
- 1/2 cup diced cooked bacon (8 slices) 125mL
- 2 tbsp chopped green 30mL onion
Preheat skillet or griddle to medium-high heat (375 F/190 C).
Pour boiling water over cornmeal. Set aside.
Combine pancake mix and water, mixing until smooth. Add cornmeal mixture; mix well. Stir in remaining ingredients.
Cook pancakes as directed on package using about 1/4 cup (50mL) batter for each.
Try ham or cooked sausage instead of bacon.
Serve with salsa for a real treat.
Add a green salad, green beans or coleslaw to make the meal complete.
