Crisp and flaky outside with sweetly tart apricot filling inside, this quick, easy and memorable
dessert can be the perfect addition for parties, impromptu get-togethers or to make any day
special. Apricots are a flavorful way to add important vitamins and extra flavor to any recipe. A
high source of Vitamin A and beta carotene, apricots also provide calcium, iron, potassium and
fiber. By using canned apricots, these easy and delicious apricot pockets can be created any time
of year. This recipe is deceptively easy to prepare, with only simple steps required and minimal
cleanup. The secret is frozen puff pastry sheets, which are thawed and then filled with canned
apricot halves. Add sugar, bake and voila, an all-around easy and delicious treat.
- 1 package frozen puff pastry sheets (2)
- 2 jars (26 oz.) canned apricot halves, drained
- 1/2 cup sugar
Preheat oven to 375.
Thaw puff pastry for 30 minutes or according to directions on box. Drain apricots and slice
each half into thirds; set aside. When pastry is thawed, put each sheet on a lightly floured surface
and roll out to extend each side by approximately 1/2 inch. Cut each sheet into eight rectangles to
make 16 pockets total.
Fill bottom portion of each rectangle with 4-5 pieces of fruit; moisten sides with a bit of water
and pinch closed to form a square. Place pocket on a baking sheet and sprinkle generously with
