Magnotta Chicken Breast with Red Peppers & Brie

- 4 large skinless, boneless chicken breasts
- 1 red pepper chopped into small cubes
- 1 quarter round of Brie
- 1 egg
- 1/2 cup of bread crumbs
Salt and pepper (to taste)Wash and pat dry chicken. Pound chicken breasts with meat cleaver until approximately 1/4 inch thick. Place a small amount of the red pepper and brie in the center of each chicken breast and season. Fold chicken over the mixture and secure with toothpicks.
Lightly beat egg for egg wash. Coat outside of each breast with egg wash and roll in bread crumb mixture.
Arrange each chicken breast in oven safe dish and cook at 350 C for 35-40 minutes or until done. Chicken should be golden brown. Serve with rice and your favourite vegetable.
