Potato Croutons:

Wash and dice 1 lb [500 g] unpeeled potatoes. Drizzle olive oil to coat. Add 2-3 cloves of crushed garlic and 2 tsp [10 mL] of any dried herb of choice [basil, marjoram, rosemary or tarragon]. Toss again to distribute well. Bake in 400 F [200 C] oven until golden brown, about 50 to 60 minutes, stirring occasionally. Allow to cool and toss into Ceasar or any other salad.

Eggs Parmentier

Antoine Permentier did much to promote the use of potatoes in France, hence, when his name is used in a recipe it indicates that potatoes are a major ingredient.

Use leftover mashed potatoes as the base for an elegant brunch. In a small bowl combine 1-1/2 cups [375 mL] of mashed potatoes with one egg adding salt and pepper to taste. Make into 3-inch [8 cm] patties about 1/2-inch thick. In medium frying pan melt a little butter and oil; cook patties until golden brown and heated through. Top with poached egg and Canadian bacon or smoked salmon.
