(NC) - Ontario's potato season runs year round, delivering fresh potatoes with an unmistakable flavour that can only come from locally grown produce. Ontario potatoes can be enjoyed on their own or incorporated into a variety of palate pleasing recipes.
This Accordion Potato Recipe is a truly rustic side. Cut thinly like fans, these potatoes will crisp up but still have soft interiors. White or waxy potatoes keep their shape when roasted. Cook alongside a tender pork or beef roast. For a tasty variation try sprinkling each potato with 1 tbsp of grated cheddar or Parmesan cheese for the final 10 minutes of roasting [or until melted].
- 4 medium Ontario Potatoes 4
- [5 to 6 oz/140 to 170 g each]
- 2 tbsp olive oil 25 mL
- 1 clove garlic, minced 1
- 1/2 tsp each, cracked black pepper and 2 mL
- dried thyme or oregano
- pinch salt pinch
Peel potatoes; cut each in half lengthwise. Place flat side down; cut thin slices into each, taking care not to cut right through. Place in single layer in shallow roasting pan.
Combine oil, garlic, pepper, thyme and salt; brush evenly over potatoes. Roast in 375 F [190 C] oven 45 to 55 minutes or until tender. Remove and let stand a few minutes before serving.
