Pimiento Cheese: A Southern Delicacy

(NAPSA) - Most Americans probably know pimientos as the small red strips stuffed into green olives.

However, there's a lot more to these veggies. The pimiento is actually a red, sweet and milder-tasting cousin to the red bell pepper (its name is the Spanish word for "pepper") and it contains more vitamin C than an orange. For nearly 90 years, the pimiento has provided the tasty little kick to a wonderful Southern tradition-pimiento cheese.

Throughout the American South, pimiento cheese is a staple of daily life and family celebrations. It's fundamental to bridge luncheons, picnics, lunch boxes, afternoon teas, lunch counter menus, baby showers, church events, weddings and funerals. Often called the "pate of the South," it's also in the most popular sandwich at the Masters Tournament in Augusta, Ga.

Pimiento cheese started showing up in grocery stores as early as 1915. During the 1920s and 1930s, this economic item boomed in popularity. It is traditionally served slathered between two slices of white bread (it keeps well, and the bread doesn't get soggy). Elvis Presley even used to top his hamburgers with it because it made an ordinary meal extraordinary.

In the 1940s, Mildred and Weldon Price of Texas began mass-producing their family recipe for pimiento cheese under the Price*s brand name. They combined real shredded cheese, fresh pimientos and seasonings for a unique, homemade taste that's deliciously chunky yet perfectly spreadable. In addition, because it's made with more real cheese than any other brand, it's a good source of calcium-so it's nourishing for the whole family. Today, the original recipe is still produced and marketed under the Price*s brand name by Bel/Kaukauna USA, an American subsidiary of Fromageries Bel, a worldwide marketer and manufacturer of cheeses.

Ingredients:

  • 2 Tbsp. Price*s Original Pimiento Cheese
  • 1 slice lean deli ham

Directions:

Spread the pimiento cheese across the slice of ham. Roll up tightly and enjoy.

Variations:

Use a slice of deli turkey instead of ham. Or, for a low-carb and low-fat alternative, try it with Price*s Light Pimiento Cheese.
