(NC) - What would summer be without watermelon? For most, this picnic staple conjures up memories of outdoor summer fun with friends and family.
With a peak season running from May to October, there is no reason to wait for a summer picnic to enjoy a watermelon's great taste.
Chef Harry, cookbook author and host of the popular PBS cooking show "Chef Harry & Friends" has been creating unique recipes using this fresh fruit for years.
A sample of his "out of the rind" thinking is this unique blending of the salty and sweet flavors of tapenade and watermelon in his simple to prepare Watermelon Canape appetizers:
- 50 seedless watermelon rectangles 50
- (1-1/4-inch wide x 3-inch long x 3/4-inch high)
- (2.5-cm x 7.5-cm x 1.5-cm) 1 qt tapenade (olive pate) 1 L
- 48 oz herbed goat cheese, crumbled 1.4 kg
On piece of waxed paper, place watermelon rectangles close together in tight row. Spread tops of watermelon slices evenly with tapenade. Over tapenade, sprinkle goat cheese. Arrange canapes on serving tray.
